Crawfish 101
How many pounds to get, when the season runs, and how to peel them.
Owner: Check these tips and change anything that isn’t how you do it, like how you season the boil or whether you sell live crawfish by the sack.
How many pounds?
Most people eat about three pounds of boiled crawfish. Light eaters and kids are happy with two. Serious eaters can put away five or more. Use the pound calculator on the home page to work it out for your group, then call ahead for anything big.
When is crawfish season?
Crawfish follow the weather. They usually start showing up after the New Year, get bigger and better priced through spring, and taper off in early summer. A cold snap or a dry spell can move things around, which is why the price changes from week to week. The board on the home page always has today’s price.
How to peel one
- Hold the head in one hand and the tail in the other.
- Twist and pull the tail away from the head. If you like it, suck the head for the seasoned juice.
- Peel off the first ring or two of shell from the wide end of the tail.
- Pinch the end of the tail and pull the meat out with your teeth or fingers.
Grab extra napkins.
Not crawfish season?
Snow crab, boiled shrimp, oysters and the whole fried menu are on all year.
